Pour real rum into a fragrance and within an hour you would smell almost nothing. The alcohol flashes off, the sugar stays behind and goes flat. So the rum note in perfume is not a spirit at all. It is an accord, built from scratch to smell like aged sugarcane.
The core is a boozy, fruity material perfumers call rum ether. On its own it reads sharp and heady, the lift you get off a freshly opened bottle. Around it the perfumer stacks fruity esters for body, one of which carries a soft overripe banana tone that is the giveaway marker of a rum accord. Then come vanilla and oak notes for the barrel, the sweetness and the wood the spirit aged in.
Put together, rum smells of molasses and dark sugar with a warm alcoholic haze and a spiced edge. It is sweet, but the boozy side keeps it from turning into plain syrup. That is why it sits so well next to tobacco, cinnamon and tonka in a winter scent.
Here is what the marketing tends to leave out. A rum note and a cognac note are cousins, not twins. Rum leans on molasses, banana ester and cane sugar. Cognac runs drier and more grape-like. Perfumers build both from aroma materials, and the skill is in the balance, not in some bottle of Caribbean spirit tipped into the vat.
