There is no such thing as pineapple essential oil.
You can distil a rose. You can press a bergamot. You cannot get a usable aroma out of a pineapple. The fruit gives up nothing worth bottling, so every pineapple note you have ever smelled was built from scratch in a laboratory.
The fruit is Ananas comosus, a bromeliad, native to South America. Columbus ran into it on Guadeloupe in 1493 and took specimens back to Europe, where it became a status object for the rich.
The molecule doing the work is allyl hexanoate, also sold as allyl caproate. It is an ester, sweet and juicy and instantly readable as pineapple. It does occur in the real fruit, in tiny amounts, but commercially it is made synthetically. Perfumers use traces of it. A heavy hand and the whole thing turns into beach-holiday air freshener.
Real pineapple aroma is dozens of volatile compounds firing at once, so allyl hexanoate alone is a sketch rather than a photograph. Perfumers stack other esters and aldehydes around it to fill in the tartness, the green skin, the sunlight.
Pineapple works as a top or heart note. The molecules are light and leave early, so it gives you the opening burst and then hands over to whatever is underneath.
The famous one is Creed Aventus, launched in 2010, composed by Jean-Christophe Herault and Erwin Creed. It is a fruity chypre, and pineapple sits in the heart, not the top, under bergamot, blackcurrant, apple, lemon and pink pepper. Beneath it, smoked birch. Juicy fruit against burnt wood is the whole trick, and it is why the fragrance is still being copied today.
Worth knowing before you go shopping for natural pineapple perfume: it does not exist, at any price. A bottle at three hundred pounds and a bottle at thirty are drawing on the same family of esters. What separates them is the rest of the formula and how much oil is actually in the liquid.
