The first marshmallows were medicine, not sweets. Around 2000 BCE, Egyptians boiled sap from the root of the marsh mallow plant, Althaea officinalis, with honey, and kept the result for royalty. French confectioners made it a sweet around 1850. They whipped that same root sap with egg white and sugar into pate de guimauve, sold as an artisan luxury. Once factories took over in the 1880s, gelatin replaced the plant. The name survived. The mallow did not.
Perfume plays the same trick. No marshmallow field is being harvested for your bottle. The note is a built accord, and its engine is usually ethyl maltol, a white crystalline material that perfumery supplier Fraterworks describes as intensely sweet cotton candy with caramellic undertones. Wrap that in vanilla, a soft white floral and a clean musk, and your nose fills in the rest: puffed sugar, powder, a faint toasted edge.
Two perfumes carried the note to fame. Love, Don't Be Shy by Kilian (2007, perfumer Calice Becker) set a sugared orange blossom heart over marshmallow, caramel and vanilla, and Fragrantica still files marshmallow among its defining notes. Then Kayali's Yum Boujee Marshmallow | 81 arrived in 2024 and turned the note into a gourmand headline act. The 81 in the name counts the rounds of formulation it took to land the final juice.
Here is the bit the note pyramids gloss over. Marshmallow on a note list is a picture, not an ingredient. Two scents listing it can smell nothing alike, because what actually differs is the dose of sweet materials and what cushions them. Read the word as a promise of texture: airy, powdery, sweet without any fruit.
