The molecule that smells of grapefruit was pulled out of a tree before anyone found it in the fruit. In 1962 the chemists Erdtman and Hirose isolated nootkatone from the heartwood of the Alaska yellow cedar, a tree named for Nootka Sound in Canada. Two years later researchers found the same molecule in grapefruit peel, where it turned out to be the fruit's signature smell.
Nootkatone is only half the fruit. The juicy, fresh-cut sharpness comes from a sulphur molecule nicknamed grapefruit mercaptan, identified in grapefruit juice in the early 1980s. Its claim to fame is potency: studies in the Journal of Agricultural and Food Chemistry rank its odour threshold among the lowest ever measured for a food compound. A trace reads as fresh grapefruit. Overdo it and it turns foul, which is why perfumers handle it in dilutions most people would mistake for water.
Real grapefruit oil exists too, cold-pressed from the peel like every citrus oil. Perfumers blend it with those two molecules to get a grapefruit that smells riper than the oil alone. Jacques Polge opened Bleu de Chanel (2010) on grapefruit, lemon and pink pepper. Invictus by Paco Rabanne (2013) crashes grapefruit into a marine accord. Both openings are on record at Fragrantica.
Here is what the marketing leaves out. Grapefruit is a sprinter. Citrus molecules are small and light, so they evaporate first and fastest. Any fragrance promising grapefruit all day is really promising a good first impression, with a different scent underneath for the afternoon. No brand escapes this, including us. What extra concentration buys you is a louder opening and a longer tail on the woods and musks below, not an immortal grapefruit.
