A green coffee bean smells of almost nothing. Everything you recognise as coffee is made by heat.
Roasting at 140 to 165 degrees Celsius sets off the Maillard reaction between amino acids and sugars, and turns a near-odourless bean into more than a thousand volatile compounds.
One of them carries the signature. 2-furfurylthiol, also called furfuryl mercaptan, is a sulphur molecule with an odour detection threshold of 0.005 parts per billion, among the lowest recorded for any aroma chemical. Neat, it smells sulphurous and foul. Dilute it far enough and it is unmistakably coffee.
For perfumery, coffee arrives two ways. Solvent extraction of roasted beans gives coffee absolute, dark and viscous, leaning chocolatey and balsamic. Supercritical CO2 extraction works at a lower temperature and keeps the bright, acidic snap that solvent extraction flattens. Fine fragrance tends to prefer the CO2.
Dosage decides the character. At roughly half a percent to two percent, coffee reads as an abstract roasted warmth that lifts vanilla and tonka without announcing itself. Push past three to five percent and it becomes literal, legible espresso.
The launch that took it mainstream was YSL Black Opium in 2014. Nathalie Lorson composed its coffee accord, and it was the first time coffee had been used at that dose in a women's fragrance. Pear and pink pepper on top, coffee and jasmine in the heart, vanilla and patchouli underneath.
Here is the awkward part. Coffee on skin does not stay coffee. The sulphurous brightness burns off early, and what remains reads closer to dark caramel or burnt sugar than to anything you would drink. Buy a coffee fragrance expecting espresso all day and hour four will disappoint you. That is chemistry, not a fault in the bottle.
