Clove is a flower that never opened. The spice is the dried bud of an evergreen tree, Syzygium aromaticum, picked before it blooms and dried until it hardens and darkens. The tree is native to a small cluster of islands in Indonesia once known as the Spice Islands. For centuries it grew almost nowhere else, and European powers fought to control the supply.
Nearly all of clove's smell comes from one molecule. Eugenol makes up around 80 to 90 percent of clove bud oil, and it carries the warm, spicy, faintly medicinal bite you know from mulled wine and the dentist's chair. Smaller amounts of eugenyl acetate and caryophyllene soften that edge and add a woody sweetness.
Here is the part that surprises people. Clove and carnation smell like close cousins, and the reason is chemical. Carnation's scent leans on eugenol too, so old carnation perfumes were often built partly from clove. Smell one and you are halfway to the other.
On skin clove reads warm and dry. It works in the middle or the base of a fragrance, where it adds heat without sugar. That is why it turns up in spicy orientals, tobacco blends and woodsmoke scents rather than fresh ones. A little goes a long way. Push it and the whole thing tips into pomander and Christmas cake.
One honest note. Eugenol is a recognised skin sensitiser, and European law lists it as a fragrance allergen that must be named on the ingredients panel above a set level. That is not a reason to avoid clove. It is why you see the word eugenol on the back of so many bottles, and why perfumers dose it with care.
Clove is a cold-weather note by nature. It wants candlelight and wool and a long evening, not a July commute.
