The thing that makes bitter almonds smell of almond is the same reaction that once made them dangerous.
Crack a bitter almond kernel and you release amygdalin, a compound that makes up around 3 to 5 per cent of the seed. Add water and an enzyme in the kernel splits it three ways: sugar, hydrogen cyanide, and a molecule called benzaldehyde. The cyanide is the poison. The benzaldehyde is the smell. The University of Bristol's chemistry department, which featured benzaldehyde as a Molecule of the Month, notes that bitter almond oil for food use is heated to drive the cyanide off, leaving only the scent behind.
Benzaldehyde is why almond notes never smell of the almonds you snack on. Sweet almonds carry almost no amygdalin, so they barely smell of anything. What perfumers call almond is marzipan, frangipane, the middle of a Cherry Bakewell. It sits closer to cherry than to nuts, because the stones of cherries, plums and apricots hold the same compound.
Perfumery leans on this hard. Carolina Herrera's Good Girl (2016, by perfumers Louise Turner and Quentin Bisch) opens on almond and coffee before its tuberose heart. Tom Ford's Lost Cherry (2018, Turner again) puts bitter almond right next to black cherry and cherry liqueur, which is less a coincidence than a chemistry lesson. Here is the bit the ad copy skips. No fine fragrance is pressing almonds for scent. Sweet almond oil is a carrier: perfumers use it to dilute, not to smell. The almond note in your bottle is benzaldehyde or one of its softer cousins, made in a lab to be identical every time, minus the cyanide. It is safer than the orchard version and steadier too.
On skin, almond behaves like a gourmand heart note. It sweetens florals without piling on sugar, then hands over to vanilla and tonka in the base.
